A phin (say it "fin") is a small Vietnamese gravity brewer. No paper filters, no electricity, no pressure — just a perforated chamber, hot water and about five minutes. Here's how to brew a great cup with a clay phin. We make the gear, not the coffee: bring any beans you love.
What you need
- 2–3 tbsp ground coffee, medium-coarse (a bit coarser than table salt)
- 3–4 oz hot water, 195–205°F (boil, then wait about 30 seconds)
- A cup or heatproof glass — plus sweetened condensed milk and ice if you want it iced and sweet
The basic brew in 6 steps
- Warm everything. Pour hot water through the empty phin into your cup, then discard it. This matters most for clay: a cold phin and cup steal heat from the first drops.
- Add the coffee. Set the plate and chamber on the cup, add 2–3 tbsp of grounds and shake gently to level them.
- Set the press. Rest it on the grounds under its own weight. No hard tamping.
- Bloom. Pour about 1 tbsp of hot water, just enough to wet the grounds. Wait 30–45 seconds.
- Fill and cover. Slowly fill the chamber to the top and put the lid on. Aim for steady drops, roughly one or two per second.
- Wait, then finish. When it stops dripping (4–6 minutes), lift the phin onto its upturned lid. Stir and sip hot, or pour over ice.
Drips too fast or too slow?
Almost every phin problem comes down to four dials: grind size, dose, press pressure and pour speed. Change one at a time.
- Rushes through in under 2–3 minutes, tastes thin: grind a step finer or add ½–1 tbsp more coffee; make sure the press sits flat on the grounds; bloom a full 45 seconds.
- Barely drips or takes 8+ minutes: grind coarser or use less coffee; loosen the press. A gentle tap on the chamber can restart a stalled drip.
- Bitter or harsh: let boiling water rest 30–60 seconds and grind a touch coarser.
- Sour or flat: use hotter water, preheat the phin and check your coffee is fresh.
- Lukewarm by the end: preheat the phin and cup and keep the lid on.
Three drinks to start with
- Vietnamese iced coffee (cà phê sữa đá): 1½–2 tbsp sweetened condensed milk in the glass, brew on top with 3 tbsp coffee, stir, pour over ice.
- Iced black coffee (cà phê đen đá): brew onto 1–2 tsp sugar (optional), stir, pour over ice.
- Hot coffee with condensed milk (cà phê sữa nóng): preheat a small cup, add 1–1½ tbsp condensed milk, brew on top with the lid on, stir before sipping.
Caring for a clay phin
Tap out the grounds and rinse with warm water; hand-washing is recommended. Let it dry fully before storing, and avoid sudden temperature shocks.
